1. Overall project description


1.1 Summary

Recent findings convincingly demonstrate that Advanced Glycation End Products (AGEs) are modifiable by diet and reflect changes in healthy state. SALIVAGES investigates whether that diet-induced AGEs can act as reliable biomarkers of changes in health status and/or risk, focusing on the most highly accessible source of AGEs, the saliva. SALIVAGES will provide innovative and original tools for assessing status and efficacy of interventions, namely biosensors, metabolomics and biomimic approaches.


1.2 Highlights

We have identified potential correlations between salivary biomarkers/fineprints and diet-driven changes in metabolic status. The results so far obtained in terms of developments of new methods for synthesis and characterization of advanced glycation end products (AGEs) and related salivary volatilome and advanced glyco-signaturing, are paving the way for the validation of salivary AGES as reliable early and non-invasive markers of health status. We are now developing prototypes of biosensors with two components: electrochemical and optical componenents for AGEs detection.
